Josh's Favorite Buffalo Chicken Dip

Josh LOVES this dip, especially while watching football games! It is a great dish to bring with you to a party or get-together, and it reheats well. Enjoy!

Buffalo Chicken Dip
From Allrecipes

2 boneless chicken breasts, cooked and shredded or diced
1 teaspoon olive oil
1 stalk celery, finely diced
1 8-ounce package reduced-fat cream cheese
1 1/2 cups blue cheese dressing
1/3 cup Frank's RedHot ® Sauce
1 cup shredded cheddar cheese

Preheat oven to 350 degrees. Heat olive oil in large skillet. Stir in celery; cook until soft. Mix in cream cheese and blue cheese dressing. Cook and stir until smooth and creamy. Stir in shredded or diced chicken (according to preference) and hot sauce. Spoon into an 8x8-inch baking dish. Sprinkle with shredded cheese. Bake in preheated oven until golden and bubbly, about 30 minutes. Serve hot with tortilla chips.

Tips:
-Shredded cheese from the grocery store is coated with flour and creates extra grease. Buy a block of cheese and shred it yourself to cut back on grease.
-You can use half ranch dressing, half blue cheese dressing if you prefer.
-I don't like celery, so I leave it out. If I'm in a hurry, I melt the cream cheese in the microwave and stir in other ingredients without ever using the stovetop, and it still comes out great.

  3. Aw, Shijo, I didn't see this till AFTER you were gone. Guess I'll have to make it next time! Nic, at least it makes life a little better when the Browns are losing. The dip still tastes good!
